I am so glad to back to a point in life where things have calmed down enough that I can get back to my blogging!!! :0) It's been a whole month!!! I am all settled into my new apt - love it!!!
Now for the cooking -
I started again this past Monday with Tilapia with Peppers and Olives. This was actually an interesting choice on my behalf because neither Michael nor I like olives - so they were left out. For this recipe you need:
2 tablespoons olive oil
4 6 oz tilapia filets
salt and pepper
2 red bell peppers
1 onion
1/2 cup pitted green olives
1/2 cup fresh flat-leaf parsley
2 tablespoons lime juice
This recipe is very easy and quick to make - pretty good - quick - healthy dinner
Just cook the fish in a skillet and then a separate skillet mix the rest of the ingredient and cook until tender and serve with the fish.
Like I said we enjoyed this dish, although when I make it again I am pretty sure I will go ahead and add the olives just for an extra kick - another flavor in this dish....
